HACCP: Self Control Systems.

HACCP’s system is a plan that uses a systematic approach that identifies specific risks, controls and prevents them to ensure food safety. HACCP system acts according to Codex Alimentarius’ principles:

  • Risk analyses;
  • Determine Critical Control Points (CCP);
  • Establish Critical Limits;
  • Establish monitoring procedures of Critical Control Points (CCP);
  • Compilation of corrective plan;
  • Records management.
